About the Recipe

Ingredients

Bread Flour 700g

Cake Flour 300g

Sugar 60g

Salt 16g

Instant Yeast 10g

Oligold Unsalted Butter 40g

Water 600ml

Syrup for soaking 2500ml

Oligold Processed Cheddar Cheese Slice 1 slice

Oligold Shredded Mozzarella and Cheddar Cheese 1 slice

Mentaiko Crab Meat Salad 50g

Sliced Cucumber 3 pieces

Cherry Tomato 1 piece

Preparation

Mix all ingredients except for butter at slow speed for 6 minutes, then at medium speed for 3 minutes until the dough is formed.


Add butter and mix until all ingredients are well incorporated. Take the dough out and let it ferment for 40 minutes.


Divide the dough into 70g portions, shape and deflate, then let it rest for 20 minutes. After shaping, let it ferment for another 20 minutes.


Take it out and dip it in hot syrup for 20 seconds, then turn it over and soak it for another 20 seconds.


Drain the excess syrup and put it in a baking tray.


Bake at 250/220 degrees Celsius for 15 minutes, then brush with a little olive oil after taking it out of the oven.
